Recipe For A Cleaner Tummy – Tomato Soup

Tomato soup is one of the easiest soups to cook. Here’s how.

Ingredients You Need:
2 tablespoons olive oil
1 onion, chopped
1 carrot, chopped
2 cloves garlic, chopped
750 g fresh, ripe tomatoes
1 x 400 g tin tomatoes
1 L chicken stock
1 cup water

How To Cook:
Heat olive oil in a large soup pot.
Saute onion, carrot and garlic for 5 minutes.
Add sliced, unpeeled tomatoes and cook for five minutes. Put the tomatoes, chicken stock and water.
Let it boil. Reduce the heat and simmer for half an hour.
Take away from heat and allow to cool.
Puree and season to taste.

Optional: To serve, drizzle extra olive oil over soup if preferred and sprinkle with grated cheese.
